Wood Duck Kabobs main dish game

Sweet with a little heat! Bet you can't eat just one kabob with this perfect protein combo of fresh veggies and duck breast. This recipe is so tender bringing out all the strong flavors that game meat has to offer. Works great with chicken or pork chops too!

Ingredients

  • Duck breasts, sliced into strips (Can substitute Chicken thighs or tenderloins)
  • 1/2 C Carolina Cooker® Sweet with a Little Heat Grillin Sauce
  • 2 Yellow Squash, sliced into large cubes
  • 2 Zucchini, sliced into large cubes
  • 1 white onion, sliced into large cubes
  • Salt and pepper
  • 1/4 C cooking oil
  • Skewers

Directions

  1. Heat a grill pan or grill to medium high. Slice duck breasts and thread onto skewers. Alternate duck breast with cubes of squash, zucchini and onion to fill up the skewers.
  2. Brush skewers with cooking oil to coat and season with salt and pepper
  3. Place skewers onto the griddle and allow to cook for about 3m on one side
  4. When flipped, brush the cooked side with the Grillin Sauce, allow to cook another 3 minutes.
  5. Continue to flip as necessary and baste with sauce, if using duck, cook to medium rare (130-135 degrees), if using chicken cook until internal temperature reaches 165 degrees
  6. Serve with an optional side of sauce for dipping
