Ingredients:

  • 2 lbs Venison Steaks
  • 1 Cup Yellow Onion, sliced thin
  • ¼ Cup + 2 Tablespoons Grapeseed Oil
  • ¼ Cup All Purpose Flour
  • 3 Cups Whole Milk
  • 2 Tablespoons Carolina Cooker® Cajun Seasoning
  • Salt and Pepper to taste
  • ¼ Cup Chives, chopped fresh for garnish

Directions:

  1. Heat 2 tablespoons of grapeseed oil in a cast iron skillet over medium heat
  2. Once the pan is hot, season the venison steaks with salt and pepper on each side. Add the seasoned steaks to the pan and sear
  3. Cook for about 2 minutes each side and remove from the pan
  4. Add in the onion and saute until translucent, about 4 minutes
  5. Remove the onions from the pan
  6. Add in the flour and oil to the pan and stir to combine
  7. Toast the flour lightly for about 5 minutes, stirring constantly until it develops a light brown color
  8. Add in the milk and cajun seasoning. Stir to combine and let the milk thicken into a gravy. Continue to stir until the gravy reaches your desired consistency
  9. Place venison and onions into the gravy. Mix together gently
  10. Plate the venison and onions with an extra scoop of gravy over the top, and garnish with fresh chives. Goes great with rice or your favorite roasted vegetables side dish!
