Ingredients:
- 2 lbs Venison Steaks
- 1 Cup Yellow Onion, sliced thin
- ¼ Cup + 2 Tablespoons Grapeseed Oil
- ¼ Cup All Purpose Flour
- 3 Cups Whole Milk
- 2 Tablespoons Carolina Cooker® Cajun Seasoning
- Salt and Pepper to taste
- ¼ Cup Chives, chopped fresh for garnish
Directions:
- Heat 2 tablespoons of grapeseed oil in a cast iron skillet over medium heat
- Once the pan is hot, season the venison steaks with salt and pepper on each side. Add the seasoned steaks to the pan and sear
- Cook for about 2 minutes each side and remove from the pan
- Add in the onion and saute until translucent, about 4 minutes
- Remove the onions from the pan
- Add in the flour and oil to the pan and stir to combine
- Toast the flour lightly for about 5 minutes, stirring constantly until it develops a light brown color
- Add in the milk and cajun seasoning. Stir to combine and let the milk thicken into a gravy. Continue to stir until the gravy reaches your desired consistency
- Place venison and onions into the gravy. Mix together gently
- Plate the venison and onions with an extra scoop of gravy over the top, and garnish with fresh chives. Goes great with rice or your favorite roasted vegetables side dish!
