Tomato Tart main dish Tomato Tart Recipe

Get a new start with this tomato tart! Baked in no time at all, this is a savory-style of tart with onions, fresh cherry tomatoes and best of all cheese to bring it all together. Nicknamed "tomato pie" this recipe is a new way to get the goodness of your seasonal produce in one meal. Experiment with your own extra toppings like different cheeses or even balsamic glaze drizzled over top for a fantastic appetizer idea.

Prep Time: 10 minutes
Cook Time: 1 hour
Serves: 4

Ingredients:

  • 4 Cups Cherry Tomatoes
  • ½ Yellow Onion, sliced thinly
  • 2 tbsp. Olive Oil
  • Juice and Zest of 1 Lemon
  • 1 tbsp. Fresh Dill, chopped
  • 1 tbsp. Fresh Parsley, chopped
  • ¼ Cup Mozzarella Cheese, grated
  • ¼ Cup Cheddar Cheese, grated
  • Puff Pastry
  • Salt & Pepper

Directions:

  1. Preheat oven to 375 degrees
  2. In a large bowl, toss tomatoes with onions, olive oil, lemon, dill, parsley and cheeses
  3. Once mixed well, spread evenly around the skillet filling up as much as possible to top
  4. Trim puff pastry into a circle to fit the skillet and lay over the top
  5. Bake until pastry is golden brown, about 50 minutes
  6. Allow to cool for at least 10 minutes before cutting into slices
  7. Top with salt & pepper to taste, or sprinkle with more cheese before digging in!
