Swan Breast Stir Fry main dish game

Take a break from basic poultry and stir fry some swan breast in the delicious Carolina Cooker® recipe. Feel free to substitute poultry.

Ingredients

  • 2 bok choy, diced
  • 1 cup sliced baby corn
  • 1 cup yellow bell pepper, sliced
  • 1 1/2 tbsp minced garlic
  • 1 cup red onion sliced
  • 1 lb swan breast (Can substitute chicken tenderloin or boneless skinless chicken thigh)
  • 1/2 lb snow pea
  • 1/2 cup green beans
  • 1/4 cup green onion (garnish)
  • Salt and pepper to taste
  • 1/2 tsp Carolina Cooker® Seafood Seasoning
  • 2 tbs sesame oil
  • 1/8 cup soy sauce low sodium
  • 2 tbsp hoisin sauce

Directions

  1. Slice the Swan breasts into 1 inch thick strips
  2. Season Swan with salt and Carolina Cooker® Seafood Seasoning and set aside.
  3. Add sesame oil to the pan and heat up over medium high heat ( in our case over hot coals) NOTE: if using a skillet over the stove, sear the swan breasts in sesame oil for about 2m each side ahead of time and remove before adding in the vegetables
  4. Once oil is hot add red onion, bell pepper and baby corn and stir. Add swan around the edge of the griddle to sear
  5. After about 2 minutes add in snow peas, bok choy and green beans, stir often to cook evenly. Once veggies have softened add garlic, sauté till aromatic about 15-30 seconds ( do not let garlic burn)
  6. Add in soy sauce and hoisin sauce. Flip the swan if using the griddle
  7. Allow swan to sear for another 90 seconds and stir into vegetable mix
  8. Serve over rice and garnish with green onion
