Stuffed Bell Peppers main dish

Hearty hamburger meat paired with sautéed ingredients, stuffed into a fresh bell pepper... yes please! Enjoy this Carolina Cooker® recipe tonight for dinner. With a blend of cheddar cheese, spinach and tomatoes - these dutch oven stuffed peppers offer up ton of flavor in every bite.

Ingredients

  • 5 to 6 Bell Peppers
  • 1 cooked Rice
  • 1 lb Ground Beef (pre-cooked)
  • 1 14oz can Fire roasted tomatoes
  • 1 Onion diced
  • 3 cloves Garlic chopped
  • 1 bunch Spinach chopped
  • 1/2 cup Cheddar grated

Directions

  1. Heat a skillet over medium heat and preheat oven to 375. Cut tops off of peppers and remove any pith that may be inside the pepper. Add ground beef and onion to the skillet and sauté until beef is browned. Add in spinach and garlic and sauté an additional 3-4 minutes. Add tomatoes and rice and stir to combine. Add mixture into each pepper until full and top with cheese.
  2. Bake at 375 for 30-35 minutes
