Skillet Blueberry Pancake main dish

Who says you can't have your cake & eat it too? Try this fluffy blueberry pancake recipe in your Carolina Cooker cast iron skillet. Great for a sweet treat or breakfast, fresh blueberries are hard to beat.

Ingredients

  • 1-1/2 C Pancake Mix
  • 3/4 C Milk
  • 3/4 C Buttermilk
  • 4 Tbsp. unsalted butter, melted, divided, plus more room temperature for serving
  • 1 C fresh blueberries
  • 1 Tbsp. vegetable oil

Directions

  1. In a large mixing bowl, add pancake mix with milk and buttermilk. Whisk to combine then add in melted butter and stir. Lastly, fold in blueberries gently.
  2. Heat a skillet over medium high heat. Coat pan with butter, butter should lightly foam when it goes in meaning the pan is hot enough.
  3. Then add pancake mixture, shaking pan lightly to settle it and bake for 10-12m @ 375. Invert onto plate and enjoy.
