Shrimp And Tidewater Grain Carolina Gold Rice Croquettes main dish seafood

Carolina Cooker and Carolina Gold Rice - a match made in heaven. Fire up your dutch ovens and enjoy this amazing shrimp croquette dish.

Directions

  1. Saute the onions and peppers over medium high heat, when almost transluescent add in the peas and garlic.
  2. Once vegetables are translucent and soft, remove to a tray or bowl and chill
  3. Heat about 1" of oil in a dutch oven or fryer to 325
  4. Add shrimp, rice and cooled vegetables to a bowl and stir with your hands. Mixture should be tacky.
  5. Pack into small balls with a 2oz scoop or with your hands, looking for about 1.5 inch diameter balls and place onto parchment paper
  6. Working in groups, fry the croquettes at 325 for about 2m each side until lightly golden brown
    Note: A darker golden brown crust may cause the rice on the outside to be too crunchy.
  7. Remove to tray and cool, serve with Carolina Cooker Southern Sunshine or your favorite dipping sauce
