Ingredients
- 1 pound mild sausage
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 sweetpotatoes, cubed
- 3 cups kale, chopped roughly
- 6 cups chicken stock
- 1 ½ cups heavy cream
- Salt and pepper to taste
Directions
- Heat a 4.5 qt. dutch oven over medium heat and add sausage and onion. Stir occasionally until sausage is browned. Next add garlic and cook until fragrant.
- Add in sweetpotatoes and chicken stock and bring to a boil. Cook until sweetpotatoes are fork tender, about 5-7 minutes.
- Reduce heat to low and once boiling has stopped, add in kale and heavy cream.
- Season with salt and pepper. Allow soup to sit for about two minutes to cool off and thicken up a little more before serving!
