One Skillet Breakfast main dish

They say it's the most important meal of the day, but who says you can't have breakfast anytime? This savory skillet breakfast hash has all the flavors of farm fresh eggs, crispy potatoes, onions and peppers mixed all into one. Grab your Carolina Cooker® cast iron skillet and get the whole family happy & feed with this great recipe!

Ingredients

  • 1 lb Breakfast sausage
  • 1 russet potato, diced
  • 1 yellow Onion, diced
  • 1 Bell pepper, diced
  • 2 Roma tomatoes, diced
  • 2 cloves garlic, chopped
  • 3 Eggs
  • Parsley to garnish

Directions

  1. Heat a 13" skillet over medium high heat. Add sausage and break up as necessary.
  2. Brown sausage and remove to a plate. Add onions and potatoes to the skillet.
  3. Saute for about 5 minutes until onions begin to be translucent then add bell pepper and garlic.
  4. Cook until softened and then add tomato and stir to combine.
  5. Mix sausage back into the skillet, stir and create 3 "wells" in the mixture for the eggs to sit.
  6. Crack eggs into wells and bake for 20 minutes @ 300 degrees.
  7. Top with Parsley and serve.
