It's outdoor cooking season! Check out how juicy, tender & downright DELICIOUS this wild duck recipe turns out on the Carolina Cooker® Kamado Grill! This ceramic grill is excellent for searing & smoking to keep your wild game meat flavorful with very little effort.

Ingredients:

  • 8 duck breast halves, skinless & bone-in
  • ¼ cup Worcestershire sauce
  • 2 tablespoons olive oil
  • ½ teaspoon hot sauce
  • 2 tablespoons garlic, minced
  • ¼ teaspoon black pepper

Directions:

  1. Mix Worcestershire sauce, olive oil, hot sauce, garlic, and pepper in a large bowl. Add duck breasts. Toss well to coat. Cover and let marinate in the refrigerator for at least 30 minutes. For best results, let marinate overnight.
  2. Preheat grill to medium-high heat.
  3. Grill the duck to desired doneness. Five minutes per side for medium-well. The size of the breast, and the temperature of the grill, will influence cooking time.
