While it might not be your first pick when it comes to poultry, and even though they are small - dove breasts pack a ton of protein and flavor! Dove has a mild, slightly gamey flavor that is often compared to duck. It is also a very lean meat so it's important to cook carefully to avoid drying it out. In this Appetite for the Outdoors® recipe we use the combination of herbs from the Carolina Cooker® Chicken & Rib Rub to help pair with the earthy palette of the dove.
Serve this dish with roasted vegetables or even a light salad with vinaigrette dressing to help balance the richness of the meat. If you want to reduce the gamey flavors even more before you fry it up - You can try soaking the dove in buttermilk overnight. Ingredients:
- 20 dove breasts, removed from breastbone
- 3 cups all-purpose flour
- 1 egg
- 1 cup milk
- 2 tablespoons Carolina Cooker Chicken & Rib Rub
- 2 teaspoons kosher salt
- 6–8 cups oil (canola or peanut) for frying
- Served with Carolina Cooker Sweet with a Lil' Heat Grilling Sauce
Directions:
- Pat the dove breasts dry with a paper towel.
- In a shallow bowl, combine the egg and milk.
- In another shallow bowl, combine the flour, Chicken and Rib Rub and kosher salt.
- Working one at a time, take a dove breast and coat it in the egg mixture, then dredge it in the seasoned flour, ensuring it's thickly coated. Let any excess egg mixture drip off before coating in the flour. Repeat until all breasts are coated.
- Heat the oil in a discada, fryer or large, heavy-bottomed pot to 375°F (190°C).
- Fry the coated dove breasts in batches until golden brown and crispy, about 3-5 minutes each.
- Once fried, season lightly with salt and place the dove breasts on a wire rack or paper towels to remove excess oil.
- Serve the crispy fried dove breasts hot along with Sweet with a Little Heat sauce as a delicious appetizer or main dish.
