Cowgirl Breakfast main dish

For Cowgirls and Cowboys alike, a one pot Dutch Oven delight for whenever you like to have breakfast.

Ingredients

  • 1 can Ro-Tel
  • 1 can Black Beans
  • 1 pound Breakfast Sausage
  • 6 Eggs
  • 1 cup Shredded Cheese
  • 2 TBS Taco Seasoning
  • Salt & Pepper
  • 8 Tortilla Shells

Directions

  1. Preheat your Carolina Cooker dutch oven over an open fire or on a stovetop to medium heat
  2. Start by browning breakfast sausage in the dutch oven
  3. Next, mix in black beans, Ro-Tel and taco seasoning together well
  4. Crack eggs on top of mixture and cover with lid for 6-8 minutes
  5. Once eggs are cooked to desired doneness, add shredded cheese
  6. Cover for an additional 2 minutes until cheese is melted well
  7. Serve over tortilla shells. Enjoy!
