We may have created the perfect side dish with this one! Full of flavor with creamy potatoes topped with a golden brown crust, this potato casserole is comfort food at its best. Bake up this recipe in your favorite Carolina Cooker® cast iron - and make those other casseroles jealous!

Cook Time: 30 minutes
Serves: 4

Ingredients:

  • 1 stick butter, melted
  • ½ pint sour cream
  • 2 cans cream of mushroom soup
  • 2 cups cheddar cheese, shredded
  • ½ cup onion, chopped
  • 10 to 12 small potatoes, cubed
  • 2 cups corn flakes, crumbled
  • Parsley, chopped fresh for garnish

Directions:

  1. In a large mixing bowl, combine the potatoes with melted butter, sour cream, cream of mushroom soup, cheddar cheese, and chopped onion. Mix well.
  2. Pour the mixture into an enamel casserole pan.
  3. Sprinkle the crumbled corn flakes over the top.
  4. Bake at 350°F (175°C) for 30 minutes.
  5. Serve immediately topped with fresh parsley and enjoy!
