Skillet Blueberry Pancake

Who says you can't have your cake & eat it too? Try this fluffy blueberry pancake recipe in your Carolina Cooker cast iron skillet. Great for a sweet treat or breakfast, fresh blueberries are hard to beat.

Prep: 5-10 minutes Cook: 15 minutes Serves: 2-4

Ingredients

1-1/2 C Pancake Mix
3/4 C Milk
3/4 C Buttermilk
4 Tbsp. unsalted butter, melted, divided, plus more room temperature for serving
1 C fresh blueberries
1 Tbsp. vegetable oil

Directions

Step 01: In a large mixing bowl, add pancake mix with milk and buttermilk. Whisk to combine then add in melted butter and stir. Lastly, fold in blueberries gently.
Step 02: Heat a skillet over medium high heat. Coat pan with butter, butter should lightly foam when it goes in meaning the pan is hot enough.
Step 03: Then add pancake mixture, shaking pan lightly to settle it and bake for 10-12m @ 375. Invert onto plate and enjoy.
