Shrimp and Tidewater Grain Carolina Gold Rice Croquettes
Carolina Cooker and Carolina Gold Rice - a match made in heaven. Fire up your dutch ovens and enjoy this amazing shrimp croquette dish.
Ingredients
2 C Carolina Gold rice cooked and cooled
1 C shrimp chopped into 1/4" pieces
1/2 C peas
1/4 C diced onions
1/4 C red pepper diced
2 garlic cloves minced
Carolina Cooker® Southern Sunshine sauce
Directions
Step 01:
Saute the onions and peppers over medium high heat, when almost transluescent add in the peas and garlic.
Step 02:
Once vegetables are translucent and soft, remove to a tray or bowl and chill
Step 03:
Heat about 1" of oil in a dutch oven or fryer to 325
Step 04:
Add shrimp, rice and cooled vegetables to a bowl and stir with your hands. Mixture should be tacky.
Step 05:
Pack into small balls with a 2oz scoop or with your hands, looking for about 1.5 inch diameter balls and place onto parchment paper
Step 06:
Working in groups, fry the croquettes at 325 for about 2m each side until lightly golden brownNote: A darker golden brown crust may cause the rice on the outside to be too crunchy.
Step 07:
Remove to tray and cool, serve with Carolina Cooker Southern Sunshine or your favorite dipping sauce
