Sausage Sweetpotato and Kale Soup

Who knew healthy tasted so good? Try this creamy soup that gives you the perfect excuse to eat your veggies! Kale and sweet potatoes might be the highlight of this recipe, but the sausage helps tie it all together guaranteeing you'll be coming back for another bowl.

Ingredients

1 pound mild sausage
1 onion, chopped
2 cloves garlic, chopped
2 sweetpotatoes, cubed
3 cups kale, chopped roughly
6 cups chicken stock
1 ½ cups heavy cream
Salt and pepper to taste

Directions

Step 01: Heat a 4.5 qt. dutch oven over medium heat and add sausage and onion. Stir occasionally until sausage is browned. Next add garlic and cook until fragrant.
Step 02: Add in sweetpotatoes and chicken stock and bring to a boil. Cook until sweetpotatoes are fork tender, about 5-7 minutes.
Step 03: Reduce heat to low and once boiling has stopped, add in kale and heavy cream.
Step 04: Season with salt and pepper. Allow soup to sit for about two minutes to cool off and thicken up a little more before serving!
