Charleston Red Rice

This ain't your grandma's rice! Our Red Rice recipe, passed down through generations, combines fluffy Tidewater Grain® Carolina Gold rice, savory bacon, and a hint of sweetness for a side dish that's both comforting and unforgettable. The combo of ingredients, along with the traditional steaming method from our Carolina Cooker® Charleston Style Rice Steamer, results in a dish that's deeply flavorful and represents classic Lowcountry cuisine.

Ingredients

  • 2 Cups Tidewater Grain® Carolina Gold Rice
  • 3 Cups Water
  • 1 - 6 Oz can of Tomato Paste
  • 2 Tablespoons Butter
  • 2 Teaspoons Salt
  • 1 Teaspoon Sugar
  • 1 Tablespoon Black Pepper
  • 1 Cup Yellow Onion, diced
  • 4 Pieces of Bacon, cooked and crumbled
  • 2 Tablespoons Chives, chopped fresh for garnish

Directions

    1. Fill the bottom pot of the Charleston Style Rice Steamer with water to just below where the top insert sits and begin to bring to a boil over medium high heat
    2. Add the top insert to the Rice Steamer and pour in the 3 cups of water
    3. Add in the tomato paste, salt, sugar and black pepper. Stir to combine
    4. Once the water in the bottom chamber begins to boil and steam, add in the onions and rice & cover with the lid. Reduce heat to medium low but make sure to maintain a boil in the bottom chamber by watching for steam.
    5. Steam for 20 minutes, check to make sure the rice is cooked, add more water if it begins to dry out
    6. Once the rice is cooked through add in the bacon and fluff the rice to combine, steam for an additional 10 minutes
    7. Serve topped with fresh chives for garnish
