Caprese Baked Puppy Drum

Here's a fun-fish-dish with a traditional Italian twist! In this recipe, Chef Chad uses fresh ingredients to create a flavorful dish for puppy drum caught right off the coast of Cape Lookout right here in NC. Who doesn't love fresh seafood?!

Prep: 10-15 minutes Cook: 20-25 minutes Serves: 2-4

Ingredients

Fresh Puppy Drum Fish Fillets
1 pint Cherry Tomatoes
½ pound sliced Fresh Mozzarella
2 tbsp Balsamic Vinegar
2 tbsp Olive Oil
Fresh Basil Leaves
Salt & Pepper

Directions

Step 01: Preheat oven to 350. Layer fish in the casserole pan and season fish with salt and pepper
Step 02: Drizzle the fish with both the olive oil and the balsamic vinegar
Step 03: Add half of the cherry tomatoes to the dish
Step 04: Next add a layer of mozzarella cheese and fresh basil, finish with the remaining tomatoes.
Step 05: Put the dish into a preheated oven - 350 degrees for 20 minutes until cheese is nicely melted. Optionally if you would like a nice brown crispy finish on the cheese, use the broiler for about 5 more minutes after baking.
