Baked Flounder
Baked Flounder
Fresh fish with a kick! Bake up a flounder dish with crunch using fried onions and our Carolina Cooker Cajun seasoning. Use with our Carolina Cooker® Enamel Cast Iron Casserole Pan.
Ingredients
2 cups French Fried Onions
3/4 teaspoon grated lemon zest
2 teaspoons Carolina Cooker® Cajun Seasoning
1/2 cup flour
4 (1/2 inch thick) flounder, tilapia or red snapper filets, split in half lengthwise
if large
3 eggs beaten
Salt and pepper to taste
Directions
Step 01:
Preheat oven to 400 degrees
Step 02:
Add flour and Cajun seasoning to a ziplock bag
Step 03:
Mix together lemon zest and french fried onions on a plate to dredge, along with a separate plate for the beaten eggs
Step 04:
Season fish with salt and pepper and add to ziplock bag, toss to coat
Step 05:
Remove fish from bag and dip filets into the egg, then into onion mixture.
Step 06:
Place on the casserole pan
Step 07:
Bake at 400 degrees for 10-12 minutes or until the fish flakes easily with a fork.
Step 08:
Serve with a squeeze of lemon and optional parsley over the top
