Sweetpotato Funnel Cakes

Ingredients

1-1/2 C Buttermilk
2 sweetpotatoes
2 eggs
1-1/2 C all purpose flour
1 tsp cinnamon
1/2 tsp nutmeg
2 tbsp sugar
3 tsp baking powder
1/2 tsp salt
Toppings:1/2 C sugar
2 tbsp cinnamon
1/2 C chopped pecans
1/4 C marshmallow creme

Directions

Step 01: Roast sweetpotatoes whole at 425 for 45 minutes or until done through
Step 02: Peel and add potatoes to blender with buttermilk and eggs. Blend until smooth
Step 03: Add wet mixture to a bowl and add flour, cinnamon, nutmeg, sugar, baking powder and salt to the bowl and whisk to combine
Step 04: Add mixture to a squeeze bottle with a wide lid or a piping bag
Step 05: Heat oil to 375 in a dutch oven and squeeze batter in overlapping circles to make the funnel cake shape
Step 06: Fry for about 3 minutes on each side, remove and sprinkle with your favorite toppings! We recommend cinnamon and sugar, with fresh chopped pecans and a dollop of marshmallow crème.
