Mixed Berry Cobbler
Bring on the fruity goodness! This homemade berry cobbler has an irresistible thick-crusted texture with all the gooey filling you would expect. Baked in our traditional cast iron skillets, this recipe includes a combination of strawberries, blueberries and whole ripe raspberries to add a slightly tart & sour flavor. Very simple to mix together to create a new Summer time favorite or a holiday dessert when topped with whipped cream or vanilla ice cream. Sprinkle with a lil' cinnamon and sugar for even more sweetness!
Ingredients
2 cups fresh mixed berries - strawberries, blueberries, raspberries
1 1/4 cups sugar
1 tbsp cornstarch
Juice from 1/2 lemon
1 cups self-rising flour
1 cups milk
1 tsp vanilla extract
1 stick butter
Ice cream or whipped cream for serving
Directions
Step 01:
Preheat oven to 375 degrees
Step 02:
In a large bowl add the berries, 1/4 cup sugar, corn starch, and lemon juice. Gently fold the mixture, careful not to break the berries, and let the berries set for at least 10-15 minutes
Step 03:
In a separate mixing bowl combine flour, remaining 1 cup sugar, milk, and vanilla extractand stir to combine
Step 04:
Melt a stick of butter in a 13" skillet over medium, once melted swirl to skillet to coatthe inside with the melted butter
Step 05:
Pour the batter into the skillet and spoon the berry mixture over the top
Step 06:
Bake for 45 minutes in 375 degrees or until golden brown
Step 07:
Allow to cool for a few minutes if serving with ice cream
