Carolina Brunswick Stew

Prep: 15 minutes Cook: 1 hour Serves: 6-8

Ingredients

  • 1 pound pulled pork
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 cups chicken stock
  • 2 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup lima beans
  • 1 cup corn
  • 1 cup green beans
  • 1 cup potatoes, diced
  • 1 can fire roasted tomatoes

Directions

    1. Heat cast iron cookware of your choice to a medium heat. Toss in onions and minced garlic.
    2. Sautéuntil onions are translucent and mixed well with garlic,
    3. Next slowly pour in chicken stock, brown sugar and Worcestershire. Stir together liquids well.
    4. Last add all the vegetables - beans, corn, potatoes and tomatoes.
    5. Bring to a boil and then reduce to a simmer for 1 hour with the lid still on.
    6. Remove lid and stir in pulled pork.
    7. Simmer with lid off for 15 minutes and then serve!
