Calabash Style Fried Bass

Today in the outside kitchen, we're frying up some fresh fish - calabash style! For this dish, Chef Chad fries up local hybrid bass caught right off Lake Norman, North Carolina. Using the Carolina Cooker Stainless Steel 2 Burner Fryer, this is a simple recipe that guarantees your catch will turn out flaky, delicious & golden brown.

Prep: 10 minutes Cook: 3-4 minutes Serves: 4

Ingredients

2 lbs Hybrid bass or other firm fish filets sliced to ~½ inch thick
1 Cup Flour to dredge
Salt n Pepper
Oil
Fresh Lime
Carolina Cooker Cocktail sauce

Directions

Step 01: Heat oil to 325-330 degrees
Step 02: Season fish with salt and pepper
Step 03: Dredge fish in flour for a light coating
Step 04: Put in oil
Step 05: Fry until golden brown approximately 3-4 minutes depending on thickness of filets
Step 06: Remove onto plate lined with paper towels to draw in excess oil
Step 07: Serve with lime and Carolina Cooker cocktail sauce, hot sauce or tartar sauce
