Smoked Oysters Rockefeller
Enjoy this Carolina Cooker take on the classic Oysters Rockefeller recipe. Oysters, Southern Sunshine sauce, and Carolina Cooker - a perfect trio for your taste buds!
Ingredients
- 12 Oysters, cleaned and shucked on the half shell
- 2 tbsp butter
- 1/4 cup minced white onion
- 1 small clove garlic minced
- 3 C baby spinach
- 1/4 C Heavy cream
- 2 TBSP Carolina Cooker Southern Sunshine Grilling Sauce
- 1/4 cup gruyere cheese (finely shredded)
- Salt and black pepper – to taste
- Wood chips for smoking
Directions
- In a hot discada, add cooking oil and onion
- Saute onion for about 1-2m and add garlic and saute for about another minute. Stir often to prevent burning
- Add spinach, stir and season with salt and pepper
- Once spinach is wilted, remove the mixture to a bowl. Add the Southern Sunshine Grilling Sauce, heavy cream, and Gruyere cheese to the spinach, stir to combine.
- Wipe out your Discada for smoking, take a little bit of water in the bottom of the Discada and let simmer for about a minute – dump out the water and take a bar towel or rag and wipe out any debris. Place Discada back on the fire and put the wood chips in the bottom.
- While wood chips are heating, place the steamer rack over the chips in the discada
- Once the wood chips are smoking, place one tablespoon of the spinach mixture on top of each oyster. Add topped oysters onto the steamer rack
- Cover with a lid and smoke the oysters for 8-10m, serve immediately
