Sausage Sweet Potato and Kale Soup

Who knew healthy tasted so good? Try this creamy soup that gives you the perfect excuse to eat your veggies! Kale and sweet potatoes might be the highlight of this recipe, but the sausage helps tie it all together guaranteeing you'll be coming back for another bowl.

Ingredients

  • 1 lb Mild sausage
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 sweet potatoes, cubed
  • 3 C Kale, rough chopped
  • 6 C chicken stock
  • 1-1/2 C heavy cream
  • Salt and pepper to taste

Directions

  1. Heat a 4.5 qt. dutch oven over medium heat and add sausage and onion. Stir occasionally until sausage is browned, then add garlic and cook until fragrant.
  2. Add in sweet potatoes and chicken stock and bring to a boil. Cook until sweet potatoes are fork tender, about 5-7 minutes.
  3. Reduce heat to low and once boiling has stopped, add in kale and heavy cream, season with salt and pepper and serve.
