Frittatas are a classic egg based dish that are both simple and delicious! This skillet frittata contains fresh veggies and comes out light, fluffy & cheesy in all the right places. Great for brunch time or a simple appetizer idea.
Ingredients:
- 8 eggs
- ½ cup milk
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 cup cheddar, grated
- 1 cup leeks
- 1 cup mushroom
- 2 cups spinach
Directions:
- Preheat oven to 350°F.
- In a bowl, combine eggs, milk, salt, and pepper. Whisk until blended.
- Heat your Carolina Cooker® 10.5-inch skillet over medium high heat.
- Add olive oil and sauté leeks and mushrooms.
- After 5 minutes, add spinach to the skillet.
- Once spinach has cooked down, add in egg mixture and cheddar.
- Stir to combine for about 30 seconds.
- Cook on stovetop until you start to see the edges set - about 5-7 minutes.
- Once edges set and become crispy, add to oven and bake for 16-18 minutes. 10. Remove from oven and serve.
