Thanks as always to our friends in @Carolina ALL OUT for the recipe goodness!

Ingredients:

  • 8 slices partially cooked bacon
  • 3 skinless duck breasts cubed
Or boneless and skinless chicken breast or thighs
  • 1 cup fresh orange slices
  • 24 wooden picks, soaked in water for at least 30 minutes
  • 1/2 cup Molasses
  • 1 Tbsp. Sriracha Sauce

Directions:

  1. Pre-cook your bacon slices until they are halfway done. You’ll want to do this prior to wrapping with the duck breast so it doesn’t overcook.
  2. Bake until bacon has released some fat but isn’t yet crispy, about 10 minutes. Remove from oven and let cool. Preheat Kamado Grill to high heat (400° to 450°). Take one slice of orange and pair with one slice of duck breast. The orange will help to keep the duck nice and moist. Use the bacon slice to wrap these tightly together and secure with toothpick. Grill duck poppers, turning occasionally, until bacon is crispy, about 2-3 minutes. Remove poppers from grill, and place in a large stainless-steel bowl. Drizzle with your Molasses and Sriracha mixture. Toss to coat poppers well, adding back to the grill for another 1-2 minutes. Serve immediately while still hot.
