Bone-in Pork Chops With Roasted Grapes And Red Onions
Give your pork chops the potential for greatness! This comfort food recipe offers up a dash of sweetness balanced with meaty flavors. Pork chops can be difficult to season sometimes, but this main dish includes fresh ingredients to help bring out the pork, while keeping each bite juicy and tender.
Ingredients:
- 4 1inch Bone-in pork chops
- 3 C Seedless red grapes
- 1 red onion, sliced
- 2 TBSP coconut oil
- 2-3 sprigs thyme
- Salt and pepper to taste
Directions:
- Salt both sides of the pork chops liberally and place on a wire rack inside a baking sheet in the refrigerator for at least an hour or up to overnight
- Heat oven to 400 degrees and heat oil in a 15” skillet over medium high heat
- Add in Pork Chops
- Saute on the one side until they brown, once browned to your liking flip and add in grapes, red onion and thyme.
- Place skillet in the oven to roast for 15-20m or until the grapes begin to burst and the pork is over 145 degrees internal temperature
- Serve topped with a few leaves of fresh thyme
