Duck Fajitas
This protein packed fajitas recipe is duck-licious! Everyone loves the sound of sizzling fajitas, and seasoned duck breasts have a delicious taste that’s tender, moist and fatty – the perfect combo for meat lovers.
Ingredients:
- 2 duck breast sliced
- 3 tbsp oil
- 1 green bell pepper sliced
- 1 orange bell pepper sliced
- 1 jalapenos sliced (optional)
- 1 onion sliced
- 1 clove Garlic minced
- 1 tbsp minced oregano (fresh)
- 1 cup minced cilantro
- Carolina Cooker Cajun seasoning to taste
- Salt and pepper to taste
- 8 flour tortillas
- Avocado (optional)
- Queso Fresco cheese (shredded)
Directions:
- Preheat your Carolina Cooker Discada and add oil. Let oil get hot. Season duck with Carolina Cooker Cajun seasoning and set to the side
- Add in onions, jalapenos, and bell peppers and sauté until tender. Note: (while vegetables are sauteing use the sides of the Discada to heat up your tortillas)
- Once vegetables are tender add in the garlic and oregano and mix well. Move the vegetables to the side of the discada and add the duck to the middle. Let the duck sauté for a few minutes and get a nice sear. Bring vegetables back and mix with the duck.
- Adjust seasoning with salt, pepper and Cajun if needed. Place a good portion of the meat and vegetables on a tortilla and garnish with cilantro, Queso fresco, and Avocado. For more heat use Carolina Cooker Hot Sauce!!
