Carolina Cooker Hoppin John
Also known as "Carolina peas and rice", this New Year's Day tradition in the South is one you'll definitely want to try. Black eyes peas, ham hock and locally sourced Tidewater Carolina Gold rice make a delightfully delicious dish. But don't wait till the New Year to cook this good luck recipe. It's great for Sunday dinner too! So pull out your Carolina Cooker Pot and let's get cooking!
Ingredients
- 1 smoked ham hock
- 6 cups water
- 2 cups dried black eyed peas
- 3 cups Tidewater Grain Carolina
- Gold rice
- 1 yellow onion, diced
- 1 jalapeno, diced
- 1/2 lb okra, sliced into coins
- 2 cloves garlic minced
- 1/2 can fire roasted tomatoes, drained
- 3 bay leaves
- 2 TBS Carolina Cooker Eastern NC Vinegar BBQ Sauce
- Scallions for garnish
Directions
- Soak black eyed peas for at least 4 hours but ideally overnight
- Add ham hock with enough water to cover to a pot and bring water to a boil, reduce to simmer and add black eyed peas and bay leaves and simmer for 20 minutes.
- After 20 minutes add in onion, jalapeno, okra, garlic, tomatoes and Eastern NC BBQ sauce and simmer for another 20 minutes.
- Taste for seasoning and serve over Carolina Gold rice and add in diced ham off the hock to taste
