Carolina Brunswick Stew
Make your entire kitchen smell amazing when you cook this Carolina Brunswick stew using our red enamel cast iron. A southern staple, we keep to our roots by adding in pulled pork, BBQ sauce and of course a blend of farm fresh vegetables! Great recipe idea to prepare and freeze to enjoy during those cold winter months.
Ingredients
- 1 lb pulled pork
- 1 onion diced
- 3 cloves garlic minced
- 3 C chicken stock
- 2 TBSP brown sugar
- 1 TBSP worcestershire
- 1 tsp Salt
- 1 tsp black pepper
- 1 C lima beans
- 1 C corn
- 1 C green beans
- 1 C potatoes diced
- 1 can fire roasted tomatoes
Directions
- Heat dutch oven over medium, add onion and garlic.
- Sauté until onions are translucent then add chicken stock, brown sugar, Worcestershire, beans, corn, potatoes and tomatoes.
- Bring to a boil and reduce to simmer for 1 hour with lid on.
- Remove lid and add pork, simmer with lid off for 15 min. and serve!
