Here's a fun-fish-dish with a traditional Italian twist! In this recipe, Chef Chad uses fresh ingredients to create a flavorful dish for puppy drum caught right off the coast of Cape Lookout right here in NC. Who doesn't love fresh seafood?!


  • Fresh Puppy Drum Fish Fillets
  • 1 pint Cherry Tomatoes
  • ½ pound sliced Fresh Mozzarella
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Olive Oil
  • Fresh Basil Leaves
  • Salt & Pepper


  1. Preheat oven to 350. Layer fish in the casserole pan and season fish with salt and pepper
  2. Drizzle the fish with both the olive oil and the balsamic vinegar
  3. Add half of the cherry tomatoes to the dish
  4. Next add a layer of mozzarella cheese and fresh basil, finish with the remaining tomatoes.
  5. Put the dish into a preheated oven - 350 degrees for 20 minutes until cheese is nicely melted. Optionally if you would like a nice brown crispy finish on the cheese, use the broiler for about 5 more minutes after baking.
