Campfire Baked Beans
Camping season is here, and baked beans are a must around the campfire. If you love BBQ and the smoky taste of bacon then you’re going to enjoy this one. A twist on traditional old baked beans using our Carolina Cooker® sauces.
Ingredients:
- 2 cans pinto beans
- 2 cans of dark kidney beans
- 1 cup smoked bacon tips (rendered and crispy)
- 1 Tbsp oil
- 3 cloves garlic
- 1 cup diced onion
- 1 red bell pepper diced
- 1 jalapeno diced
- 1/4 cup chicken stock
- 1/2 cup Carolina Cooker -Sweet with a little heat
- Salt and pepper to taste – as needed
- ¼ cup minced parsley
Directions:
- Heat oil in a pot over an open fire (or on the stove). Add in the bacon pieces and let render down until slightly crispy and a good amount of grease has formed in the pan. (This should only take about 5 minutes)
- Add in the onions and peppers and sauté until tender. (make sure to stir constantly to avoid burning).
- Add in the Garlic and mix in. Let sauté for about 30 seconds or until aromatic. Add in Carolina Cookers - Sweet with a little heat, parsley and chicken stock, mix well. Let simmer for about 15 minutes. Make sure to stir every 5 minutes or less to avoid burning.
- Taste and adjust seasoning.
