Blueberry Crisp
Easy-to-bake dessert using ripe, juicy blueberries that goes great with any cookout! With a hint of bourbon and lemon flavors, this recipe brings a fresh idea to berries.
Ingredients:
Blueberry filling:- Fresh blueberries
- 1 stick unsalted butter
- 3/4 cup brown sugar
- ½ cup granulated sugar
- 1 tbsp lemon zest
- 2 tsp cinnamon
- 1 ½ tbsp cornstarch
- 1/2 cup bourbon
- 1 tbsp vanilla
- 2 stick unsalted butter (Room Temp)
- 1 ½ cup brown sugar
- 1 ½ cup plain oatmeal (oats)
- Sliced almonds (optional)
- ½ cup A/P flour
- 2 tsp cinnamon
Directions:
- Heat your Carolina Cooker 16.5” Cast Iron baking dish, add in the butter, brown sugar and granulated sugar, let butter melt into the sugar and mix well.
- Add in the bourbon and burn the alcohol out (don’t burn down the house!)
- Once bourbon is incorporated, make a syrup and add in the vanilla, cornstarch, lemon zest, and cinnamon. Mix together once all ingredients are mixed well and no clumps add blueberries.
- Let the mix simmer on medium/low heat for about 5 minutes. Use this time to make the streusel topping. Combine all streusel ingredients into a bowl and mix together until a pebble like consistency is formed
- Add the streusel topping and place in the oven and bake for about 25 minutes or until the top is golden brown the sides are bubbling.
