Blueberry filling:
  • Fresh blueberries
  • 1 stick unsalted butter
  • 3/4 cup brown sugar
  • ½ cup granulated sugar
  • 1 tbsp lemon zest
  • 2 tsp cinnamon
  • 1 ½ tbsp cornstarch
  • 1/2 cup bourbon
  • 1 tbsp vanilla
  • 2 stick unsalted butter (Room Temp)
  • 1 ½ cup brown sugar
  • 1 ½ cup plain oatmeal (oats)
  • Sliced almonds (optional)
  • ½ cup A/P flour
  • 2 tsp cinnamon

  1. Heat your Carolina Cooker 16.5” Cast Iron baking dish, add in the butter, brown sugar and granulated sugar, let butter melt into the sugar and mix well.
  2. Add in the bourbon and burn the alcohol out (don’t burn down the house!)
  3. Once bourbon is incorporated, make a syrup and add in the vanilla, cornstarch, lemon zest, and cinnamon. Mix together once all ingredients are mixed well and no clumps add blueberries.
  4. Let the mix simmer on medium/low heat for about 5 minutes. Use this time to make the streusel topping. Combine all streusel ingredients into a bowl and mix together until a pebble like consistency is formed
  5. Add the streusel topping and place in the oven and bake for about 25 minutes or until the top is golden brown the sides are bubbling.
