Breakfast Skillet with Okra & Hoop Cheese

Breakfast never had it so good! Try this quick skillet recipe using your Carolina Cooker cast iron to lock in all these zesty ingredients. Bacon, Yukon potatoes, eggs, okra & melty cheese combine to bring out the fresh-farm-flavors that will make it the most important, and most DELICIOUS meal of your day!

Ingredients

  • 1 pound butcher's bacon, cut into 1-1/2" segments
  • 1 pound Yukon gold potatoes, cubed
  • 1 yellow onion, chopped
  • 1/2 pound okra, chopped into coins
  • 1 cup grated hoop cheese
  • 4 eggs
  • Scallions chopped to garnish

Directions

    1. In a deep skillet over medium heat, add bacon and allow fat to render while stirring periodically.
    2. Once bacon is golden brown remove and plate.
    3. Add potatoes, onions, and okra to bacon fat and stir occasionally. Okra will begin to get slimy, just continue to cook and stir as this will cook out. Once the slime has cooked out and the potatoes are cooked through, add hoop cheese and bacon back in. Stir to combine.
    4. Make 4 wells in your mixture as holes for the eggs
    5. Crack an egg into each hole and place the lid on top of your skillet.
    6. Once eggs have cooked through with the whites showing solid and the yolks having a sheen, remove the lid, add scallions, and serve.
