Baked Flounder
Fresh fish with a kick! Bake up a flounder dish with crunch using fried onions and our Carolina Cooker Cajun seasoning. Use with our Carolina Cooker® Enamel Cast Iron Casserole Pan.
Ingredients
- 2 cups French Fried OnionsĀ
- 3/4 teaspoon grated lemon zest
- 2 TBSP Carolina Cooker® Cajun Seasoning
- 1/2 cup flour
- 4 (1/2 inch thick) flounder, tilapia or red snapper filets, split in half lengthwise

- 3 eggs beaten
- Salt and pepper to taste
Directions
- Preheat oven to 400 degrees
- Add flour and Cajun seasoning to a ziplock bag
- Mix together lemon zest and french fried onions on a plate to dredge, along with a separate plate for the beaten eggs
- Season fish with salt and pepper and add to ziplock bag, toss to coat
- Remove fish from bag and dip filets into the egg, then into onion mixture.
- Place on the casserole pan
- Bake at 400 degrees for 10-12 minutes or until the fish flakes easily with a fork.
- Serve with a squeeze of lemon and optional parsley over the top
